Fall- the time for cozy sweaters, beautiful colors, and pumpkin spice everything! As I sit here on this cold, rainy fall day these muffins just feel right. So, after experimentation and several rounds of trial and error, I found the perfect Pumpkin Chai muffin recipe. Enjoy!
Ingredients:
1/4 cup coconut oil
2 chai tea bags
1/4 coconut sugar
1/2 almond meal (or corn meal)
1/2 tsp baking soda
1 tsp cinnamon
1 tbs brown sugar
1 egg
2/3 cup pumpkin puree
1) Preheat oven to 350.
2) In a pan, heat coconut oil and chai tea bags for 5 minutes.
3) Combine coconut sugar, almond meal, baking soda and mix.
4) Add pumpkin puree and chai tea/coconut oil mixture- whisk until smooth. **tip** have a sweet tooth? Throw in a handful of dark chocolate chips... you wont regret it ;).
5) Spray pan with nonstick spray of your choosing and fill with batter.
6) Cook at 350 for 22-25 minutes!
